Digitising a restaurant without replacing systems: the till and the books stay
Replacing the accounting system costs months of work and retraining, and does not solve the original problem: scattered data. It is cheaper to leave the till, the books and the rota where they are and add a layer that reads them, brings the data to one shape and checks it. The system of record stays the one you already run.
When the numbers in a restaurant do not agree, the first suggestion is usually «we need to change the system». It is the most expensive way to solve the problem and the least reliable: the migration takes months, the team relearns everything, and the data stays exactly as scattered as before - just in a new interface.
What is actually broken
Not the system. The link between systems is broken: an item is named three ways, units do not match, documents land in a mailbox and sit there until month end. A new system inherits all of it on day one.
How a layer connects on top
A separate read-only user. An account with read access only is created in the accounting system - catalogues, documents, reports.
A mailbox for documents. Suppliers keep sending invoices exactly where they sent them before.
Catalogue matching. Supplier items are tied to yours once; after that the links apply themselves.

What does not change
The till works as it worked - its settings are not touched.
The accounting system stays the system of record: reports, stock, period close all live there.
The team does not retrain: the cashier and the chef notice nothing at all.
The rota, bookings and delivery stay their own services.

No risk of losing history: it stays in the original system.
If it does not suit you, the access is revoked and everything works as before.
